4 to 6 large potatoes cooked and chunked
2 eggs boiled, peeled and diced
1/2 onion diced
2 heaping Tblsp sweet pickle relish or 1/2 cup diced sweet pickles
1 to 1-1/2 Tblsp prepared mustard
2 to 3 Tblsp Mayo
Salt and Pepper to taste

Mix all ingredients together while potatoes are warm. Cool or refrigerate before serving. Tastes best after it has chilled for several hours.

Moms potato salad was always a hit wherever she took it or sent it. I can remember her making huge batches of it for Kirk to take to different social events.
