Starter: 1/2 pkg dry yeast, 2 cups warm water, 3/4 cup sugar, and 3 tablespoons potato flakes
Dough: 6 cups bread flour, 1/2 cup oil, 1/2 cup sugar, 1 1/2 cups warm water, 1 tablespoon salt, and 1 cup starter.

Directions:
Starter: Combine yeast, sugar, water, and flakes in a quart jar. Let set at room temperature 8 hours.
Dough: In a large bowl, combine dry ingredients. Add oil, water, and starter. Grease top of dough with butter spray. Set in a warm place. Let rise until doubled in size. Pour out onto a floured board and knead well. Place into 3 greased loaf pans. Grease top of leaves and let rise. Bake at 350º for 30 minutes.

****To keep left-over starter, feed it with 1/2 cup sugar, 3 tablespoons potato flakes, and 1 cup warm water once a week; or feed it and let it set at room temperature for 8 hours and make more bread.

We couldn't wait until this bread came out of the oven. The house would smell so wonderful. As soon as it was ready, Mom would slice the bread. We'd add some butter and enjoy!
