1 pound dry navy beans, sorted and soaked
2 quarts water
1 pound meaty ham bones or chunks
1 stalk celery with leaves, finely chopped
1 large carrot, finely chopped
1 medium onion, finely chopped
1/2 tsp black pepper
1 tsp salt
1 bay leaf

Directions:

Drain the soaked beans, rinse, and put them into a crock-pot with all of the ingredients. Cover and cook on high for 5-6 hours. Lower the temperature, remove the bay leaf, and the soup is ready for the day!
