6 skinless, boneless chicken breast halves
Salt and Pepper
2 tbsp. butter
1 pkg RICE-A-RONI chicken flavor
1 tsp. dried basil
20 oz. pkg. frozen broccoli florets
1 can diced tomatoes (cut into small pieces) with liquid
6 oz. shredded mozzarella cheese

1.Sprinkle chicken with salt and pepper as desired.
2. In a large deep skillet, melt butter, add chicken, and cook 2 minutes on each side until browned.
3. Remove chicken from skillet, set aside, reserve drippings.
4. in the same skillet, saute Rice a Roni mix over medium heat until the vermicelli is golden brown. (You may need to add more butter to the skillet.)
5. Stir in 2 1/ cups water, contents of seasoning packet and basil.
6. Place chicken over rice mixture and bring to a boil over high heat.
7. Cover, reduce heat, simmer 15 minutes.
8. Top with broccoli and tomatoes.(with liquid)
9. Cover, continue to simmer 5 more minutes or until liquid is absorbed and chicken is no longer pink inside.
10.Sprinkle with mozzarella, cover and let stand a few minutes until cheese is melted.
