1 T olive oil
1 onion, diced
4 cloves garlic, crushed
salt and pepper to taste
1 lb mild Italian sausage, casing removed
4 T unsalted butter
1/4 c flour
3 c milk or 1/2 n/1/2
1 c Parmesan cheese, grated
1/4 c + 1 T chopped fresh parsley
1 T fresh sage, minced
9 lasagna noodles, cooked al dente
1 3lb butternut squash, peeled, neck portion sliced into wide, thin strips

Preheat oven 400
Cook onions in oil 8 minutes; add garlic, salt, pepper and cook 30 seconds. Transfer to bowl. In same pan cook sausage and add to onion mixture. In same pan over medium heat melt butter, add flour and cook 1 minute. SLowly add liquid and cook 8-10 minutes - it will thicken. Transfer to separate bowl and stir in 3/4 c cheese, 1/4 c parsley, sage, salt and pepper.

Assemble:
Spread 1/2 c sausage in bottom of fry pan, top with single layer cooked lasagna noodles, and top with 1/2 c sauce. Top again with sausage and layer of squash slices. Repeat layering of noodles, sausage and squash- replacing lasagna noodle with squash every two layers. Top with remaining sauce and cheese. Bake 45 minutes. Sprinkle with remaining parsley. Let stand 15 minutes.
