1 1/4 cups flour
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1 cup butter or margarine, softened
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
1 tsp. grated orange peal
2 3/4 cups oatmeal
1/2 cup coconut
Add in ideas: 1/2cup or more of as many as you want. Mix and match: nuts, dried fruit, toffee chips, chocolate, butterscotch, white chocolate, or peanut butter chips

Heat oven to 375º. Mix butter, sugars and eggs in a large bowl. Add flour, salt, cinnamon, soda, and orange peel. Stir in oatmeal, coconut and other add ins. Drop by rounded tablespoon onto ungreased baking sheet. Bake for 7 to 10 minutes depending on if you want chewy or crispy cookies.
