2 poblano peppers (seeded and coarsely chopped)
1/2 cup red onion (coarsely chopped)
1/2 cup corn kernels (frozen or fresh)
8- 8 inch flour tortillas
6 oz. reduced fat shredded cheese

Directions:
Directions:
Place a cast iron skillet in oven and preheat to 400º F. Add Poblanos, onion and corn to the pan. Dry roast the veggies stirring occasionally for 12-15 minutes until brown. Set aside. In cast iron skillet over medium high heat place four tortillas on cutting board and place 1/4 of roasted veggies and 1/4 cheese on each of them. Tope with remaining 4 tortillas and press down. Cook the quesadillas one at a time in the hot pan for about 2 minutes per side.
