3 tbsp. oil
6 cube steaks
salt and pepper
1 onion; chopped
1 lb. mushrooms; sliced
3/4 cup chicken broth
1/2 cup sour cream; at room temp.
1 tsp. dijon mustard
1 tsp. tarragon

Directions:
Directions:
In a skillet over medium-high heat add 1 tsp. oil and brown cube steaks on both sides. Season with salt and pepper as they cook. When done remove from pan and keep warm. In same skillet, heat remaining oil and add onion and mushrooms. Cook until soft and all liquid is evaporated. Add chicken broth and stir scraping up brown bits from bottom of pan. Bring to boil, reduce heat and cook until reduced slightly, about 1 minute. Remove pan from heat (sauce will break if you don't do this). Add sour cream, mustard and tarragon. Salt and pepper to taste. Add beef (and juices) back to sauce. Heat through until beef is fully cooked.
