4 skinless, boneless chicken breast halves about 4 oz. each
½ tsp. salt
¼ tsp. coarsely ground black pepper
1 T. vegetable oil
2 c. (½") diagonally sliced carrots
1 c. (¼" thick) sliced onion
1 clove garlic, minced
16 oz. sliced mushrooms
¼ c. all-purpose or Wondra flour
14 ½ oz. can fat-free chicken broth
1 T. chopped fresh or 1 tsp. dried thyme
Chopped fresh chives (optional)

1. Heat a large nonstick skillet coated with cooking spray over medium high heat. Add chicken and sprinkle with salt and pepper. Cook for 4 minutes on each side or until lightly browned. Remove from pan.
2. Heat the oil in pan over medium high heat. Add carrot, onion, and garlic. Cook 2 minutes. Add mushrooms, cook 5 minutes or until vegetables are tender. Sprinkle with flour and cook 2 minutes, stirring constantly.
3. Add broth and thyme; bring to a boil and cook until slightly thickened, stirring frequently. Return chicken and juices to pan; cover, reduce heat, and simmer for 10 minutes of until chicken is done. Garnish with chives.

This dish is the epitome of "comfort food". It also holds well on the stove once prepared. We usually have this with the Horseradish Mashed Potatoes.
