1/2 lb. ground Beef
1/2 lb. ground Pork
3/4 c. Breadcrumbs - Panko (Japanese bread crumbs) is best!
Ketchup
Salt and Pepper
1 Onion finely chopped
1/2 Green Pepper finely chopped
2 tbsp. Parsley - finely chopped
1 Egg
5 strips Bacon

Directions:

Preheat oven to 350 degrees. Have a casserole or baking pan handy.


In a large bowl mix together the ground beef and pork.

Add the egg, onion, green pepper, parsley, and breadcrumbs to the ground meat mixture and mix well using your hands.

Add in a good squirt of ketchup. Add salt and pepper based on your tastes.

Form into a loaf and place in the pan.

Place strips of bacon across the top of the meatloaf and add a few stripes of ketchup across the top as well.

Bake for about 45 minutes or until done.

I find that Panko breadcrumbs are so much better than regular - they create nice crusts and add a little crunch when used.
And pre-cooked bacon works just as well as uncooked and is so easy to keep in the pantry.
