¾ c. baking cocoa
2 c brown sugar
¾ c. oil
3 large eggs
2 ½ c. flour
1 T. orange juice
2 ½ tsp. baking powder
1 T. strong coffee
1 ½ tsp. baking soda
2 c. shredded zucchini
½ tsp. cinnamon
½ cup sour cream
½ c. chopped walnuts
1/8 tsp. salt

Chocolate Frosting:
1 c. baking cocoa
1 tsp. vanilla
2 ½ to 3 c. powdered sugar
½ c. chopped walnuts
1 stick softened butter
½ c. cream or evaporated milk

Preheat oven to 350º.
1. Use well greased baking pan or bundt pan. In large bowl, mix oil and cocoa. Beat in eggs.
2.In small bowl, combine all dry ingredients, add to egg mixture and mix well. Add orange juice, coffee, zucchini, walnuts and sour cream.
3.Spoon batter into pan and bake for 50-60 minutes. Check center for doneness. Cool and frost.

Making the frosting:
Mix cocoa, sugar, butter, cream and vanilla in bowl. Beat until fluffy (7 minutes). Frost cake and sprinkle with chopped walnuts.

This is a beautiful cake and a wonderful way to use up some of the zucchini from the garden.
I especially like to make it in a bundt pan and drizzle all the frosting down and sprinkle with chopped walnuts. Mmm Lovely.
