3 T butter
1 medium onion
1 lb ground beef
1 can Cream of Mushroom soup
1 can Cream of Tomato soup
1 bag egg noodles
1 small block of Velveeta
Salt & pepper to taste

Directions:
Directions:
Preheat oven to 350 degrees F.

Dice the onions to the size you like best. Melt the butter in a skillet and add the onions. Sweat the onions until they are translucent, do not brown. Add ground beef and brown. Drain the fat off of the meat and add both soups to the meat. Cube the Velveeta cheese in 1" cubes and add 2/3's to the meat mixture. Season with salt & pepper as you prefer. Boil the noodles according to the directions on the label and drain thoroughly. If necessary, use a larger bowl to combine noodles and meat mixture and pour into a casserole dish. Top with the remaining 1/3 cheese cubes.

Bake for 25-30 minutes covered with foil, stir and bake uncovered for another 15 minutes or until the top has slightly begun to brown.

Yummy, creamy, cheesy gooey-ness in a dish! Definitely not a dish you can diet with as is, but if you are so inclined, you can use low-cal substitutions to help bring down the calorie count if you like. (i.e., Reduced fat cheese, soups, meats, etc.)
