8 slices bacon crumbled
2 c. cubed whole wheat bread (rye is good too)
1c. milk
1c. toasted bread crumbs
3- T. butter
1/3 lb. Swiss cheese
8 eggs
˝ tsp. salt
˝ tsp. pepper

Directions:
Directions:
Soak bread cubes in milk for 10 minutes and drain excess off. Soft scramble eggs and bacon in butter, salt and pepper. Fold in bread cubes cook until set.
Layer cheese and egg mixture in small greased baking pan. Sauté breadcrumbs in butter and sprinkle over casserole. Bake for 20-25 minutes at 400 degrees.

This can be modified with ham or sausage for a nice variation. A meal all in one. Serve this with a hot cup of coffee and fresh fruit. Wow I'm there.
