1 bag hash brown potatoes
1 full cup chopped green onions
2 cups chopped mushrooms
1 tube Jimmy Dean regular breakfast sausage
12 eggs beaten
1 cup Parmesan cheese
2 cups shredded sharp cheddar cheese
1 cup milk
1-1/2 c. of any chopped vegetable you like.

In a fry pan, brown sausage. Spray 9X13 baking pan with Pam and press hash brown potatoes in bottom of pan. Spread chopped onions, mushrooms, and sausage on potato crust.
Bake at 400 degrees for 20 minutes.
Scramble 12 eggs with milk, salt and pepper to taste. May add green chilies, cumin, garlic, and broccoli/ vegetables for variations.
Pour eggs over hash brown mix, add both cheeses, and bake 30 more minutes. Check for doneness.

We like this as I modify it with almond milk and leaving out the cheese to fit our food allergy family members. It is all so good no one misses the dairy.
