1 cup boiling water
1/4 teaspoon salt
4 eggs
1/2 cup butter
1 cup flour

Bring water, salt and butter to boil. Add flour all at once and cook, stirring constantly until mixture leaves the side of the sauce pan. Cool, add eggs one at a time, beating each one in thoroughly before adding the next. Drop by tablespoon a little distance apart on a greased baking sheet. Bake in hot oven 450º for 15 minutes, then reduce to 350º and bake additional 20-25 minutes longer. when cold make incision in sides and scoop out soft center. Fill with cream filling or custard sauce. Makes one dozen.
Cream Sauce
2/3 cup sugar
1/2 cup flour
1/2 teaspoon salt
2 cups scalded milk
2 eggs, beaten
1 teaspoon vanilla
Combine sugar, flour and salt. Gradually add milk stirring constantly. Cook in double boiler or 10 minutes. Add eggs, cook 2 minutes longer. Cool, add vanilla. Spoon into cream puffs.

Custard Sauce
1 cup milk
2 egg yolks
2 Tablespoons sugar
1/8 teaspoon salt
1/4 teaspoon vanilla
In double boiler scald milk over hot water. Beat egg yolks, salt and sugar. Pour milk over this and return to double boiler. Cook, stirring constantly about 5 minutes or until custard is thick enough to coat a spoon. Cool, add vanilla. Spoon into cream puffs.
