1 Eggplant
2 Eggs
1 cup breadcrumbs
2 tbsp olive oil
salt
pepper
Tony's (optional)
Cayenne Pepper (optional)
parmesan cheese (optional)
sesame seeds (optional)

Directions:
Directions:
Preheat oven to 425º
1. Skin eggplant, and cut into 1 inch thick sticks
2. Fill a mixing bowl with salt walter, and soak eggplant in salt water for about 30 min (you may want to put a plate on top of them to keep them from floating)
3. Mix breadcrumbs in a bowl with whatever type of seasoning you prefer (I mixed the breadcrumbs with a little cayenne pepper, tony's, grated parmesan cheese, salt, and sesame seeds)
4. Add the olive oil to the breadcrumb mix, and mix with your fingers so the oil is evenly distributed
5. Whisk eggs in a seperate bowl (can use egg whites if you prefer)
6. Remove eggplant from water and dry
7. Dip each eggplant stick in the egg mixture, then in the breadcrumb mixture, shaking off excess breadcrumbs, and place on a baking sheet
8. Bake eggplant for 30 min, turning over halfway through
