1 T. yeast
1 T. sugar
1 tsp. Salt
2 Tab. soft butter or oleo
1 c. warm water
1 slightly beaten egg white
2 ¾ c. all purpose flour (we use white spelt)
coarse salt to sprinkle before baking’
5 tsp.baking soda in 4 cups water
1 large slotted spoon, greased cookie sheet. Oven at 475º

Mix yeast, sugar, salt, butter, 1-cup flour and water in a mixer. Allow to rest and bubble. Add remaining flour, knead. Roll out on floured surface. Using small sections of dough form a circle each with a bow tie look. Boil water/soda solution. Drop one at time each pretzel for 1 minute. Using slotted spoon drain and place on greased cookie sheet. Brush with egg white and sprinkle each with coarse salt and bake for 12 minutes. Serve with mustard or cheese spread.
