3 lb roast beef
salt and pepper
4 tbs olive oil
1 lb fresh mushrooms (sliced)
2 small onions (quartered)
1 c red wine
1 c beef stock
2 tbs flour

Directions:
Directions:
Preheat oven 375º. Season roast with salt and pepper. Heat 2 tbs oil in large cast iron skillet. Sear roast on all sides (med heat)
Add mushrooms and onions to bowl. Add 2 tbs oil and toss lightly. Add to skillet around roast.
Put skillet in oven and roast about 40 min. Internal temp 130º. Remove roast and veg from pan. Let rest about 10 min.
Prepare gravy-add flour to skillet, scraping bottom drippings. Add wine and stock to skillet. Simmer until gravy is smooth and thick.
