2 med zucchini
2 med eggplants
6 plum tomatoes
2 med carrots
2 yellow sweet peppers
Wild rice (as desired)

Directions:
Directions:
Trim the stems off the zucchini, eggplant and carrots. Cut them lengthwise into 1/4" thick slices. Cut plum tomatoes in half. Cut peppers in half and spray with olive oil. Grill for 5 minutes on each side. Serve over wild rice.
