Directions:
Cook and cool: 1 c. oatmeal (quick oats). 2 c. warm water, and ¼ c. margarine (I use butter.)
While cooling, add ½ c. brown sugar and 1 ½ t. salt to oatmeal mix.
Dissolve in large bowl:
2 packages yeast(1 1/2 Tbsp of the rapid rise) in 1/3 c. water with 1 T. sugar.
When oatmeal is cool, add to yeast mix and stir in 4 ½ c. flour. Knead for a few minutes. Let raise till double in size, about 1 hour. Form into balls (larger than golf balls but smaller than tennis balls.) Let raise about 1 - 1 1/2 hours until doubled. Bake in preheated 375* oven till light brown, 15-20 minutes. Lightly brush butter on top when finished.
