1 Medium onion, chopped
1 large can pieces and stems mushrooms (drained and save juice)
2 cans beef consume
1 stick butter
1 cup uncooked white rice

Directions:
Directions:
In a pan add the stick of butter, the chopped onion, and drained mushrooms and cook over medium heat until onions are tender--stirring often.

Mix consume and mushroom juice and heat slightly.

Spray a 2 1/2 to 3 qt casserole dish with cooking spray. Pour rice into dish, add hot mixture and stir well. Cover dish and put in oven at 375 degrees for 45-50 minutes. Take out and stir well. Return to oven for about 45 more minutes. Check to see if rice is done, if not leave in for extra time.
