"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
1 bunch fresh cilantro, chopped, washed, dried, picked off stems
1 small vidalia onion (or any sweet), chopped
8-10 jalapeno peppers, seeded, chopped
1 lb fresh tomatoes, chopped
1 28 oz can progresso crushed tomatoes
2 tbsp Lawry's garlic salt
2 tbsp ground cumin

Directions:
I prefer to hand chop this but it can be done in a food processor. If using a processor, chop each item by themselves in this order and mix in a bowl.

This makes a quart of salsa. I prefer to make it a day ahead. It lasts in the refrigerator 2-3 weeks.
