8 pork cutlets
1 tsp coarse salt
1/2 tsp ground pepper
2-4 tbsp olive oil
juice of one lemon
2 T finely grated Parmesan cheese
grainy mustard for serving
parsley for garnish

Directions:
Directions:
Place pork cutlets between 2 sheets of parchment paper and pound to 1/8 inch thick. Season both sides of pork with salt and pepper.
Heat 2 T oil in a large saucepan over medium high heat. Working in 2 batches, add pork to pan and cook, flipping once, until golden brown, about 1-2 minutes on each side.
Transfer to platter. Drizzle lemon juice over pork and sprinkle with Parmesan cheese. Garnish and serve with mustard.
