8 ozs. dried penne
1 14 oz. can whole Italian-style tomatoes
1/3 C. tomato paste
1/4 C. dry red wine
1/2 tsp. sugar
1/2 tsp. dried oregano
1/4 tsp. ground black pepper
1 lb. ground lean beef
1/2 C. chopped onion
1/4 C. sliced pitted olives
1/2 C. shredded mozzarella cheese

Preheat oven to 375 degrees. Cook pasta according to package directions. Drain well. In a blender or food processor, combine undrained tomatoes, tomato paste, wine, sugar, oregano and pepper. Cover and blend until smooth; set aside. In a large skillet cook the beef and onion until meat is browned. Drain off fat. Stir in tomato mixture. Bring to boiling; reduce heat. Cover and simmer for 10 minutes. Stir in pasta, oregano and olives. Spoon pasta into a 2-quart casserole. Bake, covered for 30 minutes. Sprinkle with mozzarella cheese. Bake, uncovered, about 5 minutes or until cheese melts. Serves 6.
