3 T unsalted butter
2 garlic cloves chopped
3 ounces thinly sliced prosciutto cut into strips
1 large can of Italian tomatoes, chopped and drained
1/2 tsp crushed red pepper
1/2 cup cream
1/4 cup vodka
1 pound penne pasta
grated Parmesan cheese

Cook pasta. In large skillet to hold cooked pasta, melt butter, add garlic and cook until golden. Stir in prosciutto and cook 1 min. Add tomatoes and crushed red pepper simmer for 5 mins. Add vodka. Season to taste with salt. Add cream. Cook for 2 mins. Add pasta to skillet with sauce and toss until well coated. Add cheese and serve immediately.

I also make this ahead of time and put in casserole dish and bake in the oven until heated thru and thru. You might need to add a little liquid from the can of tomatoes if too dry.
