1 Small Wheel of Brie in the rind, well chilled.
1 sheet of Frozen Puff Pastry
Twine
1 Egg
1-2 Loaves of good French Bread

Directions:
Directions:
Remove puff pastry from package and wrap still folded in a dry tea towel. Thaw for about 20 minutes or until it is easily unfolded without tearing, but not too soft.
Roll out puff pastry on a lightly floured surface into a large square, large enough to bring up over Brie with plenty of extra, but not too thin.
Place Brie in the center.
Bring corners of the square together and wrap twine at the base in a bow (being gentle so as not to tear the pastry). Fluff out the excess puff pastry above the twine like you would tissue paper in a package.
You can prepare the Brie to this point, wrap with plastic wrap and refrigerate until a few minutes before you intend to serve.
To finish, preheat oven to 350º.
In a small bowl, gently whisk egg with a T. water.
Brush over entire Puff Pastry with egg wash.
Bake until golden brown 15-20 minutes. Serve immediately with sliced French bread.
