3 lbs collards
2 tsp. olive oil
2 bacon slices, finely diced
8 cups chopped onions
1/2 tsp. salt
1/2 tsp. pepper
1 to 1/2 tsp. hot pepper sauce

Directions:
Directions:
Remove stems from collards, wash and pat dry. Stack 4 or 5 leaves together and roll up tightly. Slice thinly. Heat oil in dutch oven and add bacon. Saute for 2 minutes, add onions and cook for 2 more minutes. Add collards and cook for 25 minutes stirring frequently. Add salt, pepper and sauce and serve hot.
