2/3 c. shortening
2 egg yolks
½ c. sugar
1-1/2 tsp. baking powder
1 lemon, juice & zest
2 c. flour (or as needed)

Filling
4-5 large apples grated or 5-6 c.
½ c. fine bread crumbs
1 c. sugar
1 tsp. cinnamon

Mix dough and roll out half to line bottom and sides of a baking dish (not more that ½ inch thick).Cook filling in microwave for 5-6 minutes and pour into bottom crust. Roll out top crust and put over apple filling. Bake at 350º about 35-40 minutes or until golden. Cool and cut into bars.
A trick to move top crust to pan: roll out desired size, and roll dough over rolling pin and unroll over pan like a roll up window shade.

I remember being 10 years old hoeing beans on the hottest day of the year with the whole family. I hoed beside Gramma that day - she took four rows; I had one.

She shook her head and said, “Caroline, dare are many tings in life you vont vant to do, but...you must do dem anyvay, and day vill make you strong.”
