3 Large onions.
2 Large green peppers.
3 Blocks sharp cheddar (shredded)
4 lbs. ground sirloin
4 Packages corn tortillas (12 per pack)
2 3lbs. cans tomato sauce
extra virgin olive oil
3 tbsp. chili powder
2 cans black olives (sliced)

Make Filling: Saute 1/2 of the onions and green peppers in oil and salt and pepper to taste. Add ground meat and simmer. While sirloin mixture is simmering fry the tortillas in hot oil until they are pliable. Stuff the tortillas with the mixture and roll them up. Put into baking pan and cover with cheese.
Sauce: Put tomato sauce and the rest of the onions and green peppers in the same pot the filling was cooked in. Add olives, chili powder and remaining cheese. Pour over tortillas and cover with foil.
Bake at 350º for 45 minutes.
