6 oz. white baking chocolate (chopped and melted)
1 box white cake mix
3 large eggs
8 oz. reduced fat sour cream
1/3 c. salad oil
1 tsp. vanilla extract
1 c. sweet shredded coconut
1 c. macadamia nuts (chopped)
Frosting:
4 oz. white baking chocolate (chopped and melted)
1 (8 oz. pkg.) 1/3 less fat cream cheese softened
1/2 stick butter softened
1 1/2 c. confectioners sugar
1 tsp. vanilla extract

Directions:
Directions:
Mix together: melted white chocolate, cake mix, eggs, sour cream, oil and vanilla. Blend for 3 minutes.Stir in: coconut & macadamia nuts. Pour in 2 greased - 8" round cake pans or 1-9x13" pan. Bake at 325º for 40-45 minutes. Cool for 15 minutes and remove from pans.
Frosting: Put in large bowl: melted white chocolate, cream cheese and butter and beat till smooth. Add confectioners sugar and vanilla, and beat till creamy.

For a layer cake use a thin layer of frosting and a layer of raspberry preserves between the two cakes. Cover cake with the rest of the frosting.
