2 lbs. ground beef
1 egg
1 carrot, cut in rounds and then 1/2
1 small onion, 1/2" diced
1/2 c. bread crumbs
1/2 tsp. pepper
1 tsp. season salt
3/4 c. ketchup or tomato paste
4 potatoes quartered

Heat oven to 350º. Put all the ingredients except 1/c c. ketchup and the potatoes in a 9x11" pan. Mix together. Use your hands and make sure that the mix is slightly firm, If not add a little more bread crumbs. Shape into a loaf. Frost with the balance of the ketchup or tomato paste. Place the cut potatoes around the loaf and season with salt and pepper. Place in the oven until the meat tests 155º in the center and the potatoes are browned. Approximately 1 1/2 hours. Served with a salad for and easy one dish meal.

I use 1/2 beef and 1/2 ground turkey. I check the meat after about 1/2 hour and remove some of the fat from around the loaf.
