Ingredients: 1 (18.25-ounce) white cake mix - without pudding in the mix 2 large egg whites 1/3 cup vegetable oil 1/3 cup cherry juice from small jar maraschino cherries 2/3 cup white Champagne (I used Andre white Champagne) Filling: 1 8-ounce Cool Whip 1 3-ounce cream cheese 1/2 cup chopped maraschino cherries 1/4 cup chopped pecans Topping: 1 16-ounce Cool Whip - add a few drops of red food coloring to make it pink. Chocolate curls or chocolate shavings

Directions:Preheat oven to 350º. Grease two 8" round cake pans or can use heart shaped pans. Combine cake mix, egg whites,oil, champagne and cherry juice in a large bowl. Beat 4 minutes using an electric mixer. Pour into prepared cake pans and bake at 350 for 25-30 minutes or until toothpick comes out clean. Cool completely. Remove from pans. Prepare filling by mixing the Cool Whip and cream cheese with an electric mixer. Add chopped cherries and pecans. Prepare topping by mixing the Cool Whip with a few drops of red food coloring. Assemble cake by placing filling on top the first cooled cake layer. Top with second cooled layer. Frost cake with Cool Whip that has been tinted with red food coloring to make it pink, and place chocolate curls on top for a grand finish!
