4 cans white albacore tuna packed in water, drained of all liquid
1 large onion chopped small
3 Tbs. olive oil
1/2 cup cooked and finely chopped broccoli (head only)
1/2 cup finely diced raw carrot
2 Tbs. balsamic vinegar
3/4-1 cup Hellman's Mayo
Black pepper to taste

Directions:
Directions:
In a medium skillet, heat olive oil and add onions. Saute onions over medium high heat until soft and nicely browned around the edges. Set aside.

Break up the tuna with your fingers to a fine consistency into a mixing bowl. Add broccoli, carrots, vinegar and black pepper. Stir in onions, then add mayo to desired wetness.

I got this recipe from a restaurant I worked at after college called The Production Line. Brent ADORES it! A few notes: 1) I throw the broccoli into the onion after the onion is done cooking to cook it 2) You can use low fat mayo, but the real thing really makes it 3) I think the browned onions and balsamic vinegar really make this recipe. Enjoy!
