This is a list of ingredients from my Aunt Betty Price. As you can see, nothing is exact, you just learn to get a feel for the proportions. I like to add Basil to the mixture. Tastes even better the second day! Freezes well.

I tend to use the boxed version of chopped or pureed tomatoes, usually 2, then add a large can of tomato sauce and 2 small cans of tomato paste. You can also sautee the onions and some green pepper and garlic gloves in a little olive oil to start, then add the tomato mixture, then the rest of the ingredients. Be sure to cook the meat first before adding to the sauce. The sugar really offsets the acid, but you can also use artificial sweetener. I often will put all the ingredients into a slow cooker in the morning, let it cook on high for a few hours, then turn it to low for a few hours.
