1 1/4 cup flour
2 tsp baking powder
1/2 tsp salt
1 tbsp sugar
1 1/4 cup milk
4 tbsp oil
2 egg yolks
2 egg whites

Directions:
Directions:
Mix all dry ingredients together. Using a mixer, beat egg whites until stiff. Add in oil, milk and egg yolks. Stir. Add in egg whites and fold into batter.

You can use this for pancakes or waffles. Receipe doubles easily. If you double it, I use 1 1/4 white flour and 1 1/4 whole wheat. I have a square waffle iron, so you can make 4 waffles at one time. Freezes well, and they fit in a toaster!
