1 dozen oysters on 1/2 shell
1/2 c boiled, chopped spinach
1/4 c chopped mushrooms
1/4 c finely chopped green onions
1 egg yolk
2 tsp chopped parsley
1/3 glass white wine
1 tbsp flour
1 tbsp butter
1/4 c fish stock or chicken stock
salt and cayenne to taste
kosher, sea or ice cream salt

In 2 pie plates, place salt. Preheat in oven. To make sauce, fry green onions in butter until brown. Stir in flour and blend smooth (a whisk works best). Remove from heat. Add fish stock, salt and pepper. Beat egg yolk with wine and slowly add to sauce. Return to heat and simmer. Add mushrooms and parsley. Cook about 10 minutes, stirring constantly. Place oysters on 1/2 shell on salt bed. Top each oyster with sauce, breadcrumbs and paprika. Dot with butter. Bake 10 - 15 minutes until edges of oysters curl.

Note: the recipe does not say what temperature the oven should be! But 350 degrees is a safe bet. I picked this recipe up from a local newspaper or magazine when I lived in New Orleans.
