2 eggs
1/2 cup melted margarine
1 cup sugar
8 oz. plain yogurt
2 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. lemon rind
1 cup raspberries

Directions:
Directions:
Preheat oven to 375º. In a large bowl, beat together eggs, melted butter and sugar. Stir in yogurt. Add dry ingredients, mixed together. Fold in raspberries. Bake for 25 minutes.

This recipe originally came from a magazine and was meant for blueberries. It has become a tradition in the summer to bake these muffins with Mom Mom and Pop Pop’s own raspberries.
