2 TBSP. butter
2 TBSP. olive oil
8 medium potatoes, sliced (you don’t have to peel them)
½ C. onion, chopped
1 C. diced ham
10 eggs, lightly beaten
1 C. shredded cheddar cheese

Directions:
Directions:
In a large iron skillet, add oil and melt butter over medium heat. Add sliced potatoes and cook until almost tender, flipping occasionally. Add onion and continue cooking until onion and potatoes are tender.
Reduce heat slightly and add ham and eggs. Cook, stirring frequently, until eggs are set. Sprinkle cheese on top of mixture and cover, just until cheese is melted.

We more often eat this for dinner than breakfast. It's a simple and quick meal after a long day. I like to delude myself that the reason for not peeling the potatoes is for extra fiber and nutrients. The truth is that I'm lazy.
