6 1/2 c old-fashioned rolled oats
1/2 c wheat germ
1 c chopped nuts (optional)
2/3 c vegetable oil
1 c honey
2 t vanilla
2 t cinnamon (optional)

Directions:
Directions:
In a large bowl combine oats, wheat germ and nuts. In a small saucepan over medium heat, combine oil, honey, vanilla and cinnamon and cook until it becomes a thin liquid (this happens quite quickly). Remove from heat and pour over the dry ingredients, mixing thoroughly. If the mixture is too wet, you can add more oats. Put in a 9 x 13 pan and bake at 250-275º for 15 minutes. Remove from oven and stir. Bake for 12-15 minutes longer, or until it starts to turn light brown on top. Add 2 c of dried fruit, if desired, and mix. Cool, then store in a tightly-covered container in the refrigerator.
