4 strips bacon, diced
1 sm onion, chopped
2 cloves garlic, minced
2 can black-eyed peas, undrained
2 cans diced tomatoes, undrained
1 c. water
1 1/2 tsp. salt
1 tsp. chili powder
1/2 tsp. pepper
1/4-1/2 tsp. sugar (optional)
Colby-jack cheese, shredded
fresh parsley, minced
bacon, for garnish

Directions:
Cook bacon. Saute onion and garlic in bacon drippings. Add peas tomatoes, water and seasoning. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes. Sprinkle with cheese, parsley and bacon.
