2 tablespoons vegetable oil.
1 tablespoon prepared mustard.
2 tablespoons caraway seeds.
1 tablespoon garlic powder.
1 tablespoon salt.
2 teaspoons ground black pepper.
5 lbs pork shoulder blade roast or tenderloin.
3 medium onions, chopped.
1 beer.

Directions:
Directions:
1) Put a little bit of vegetable oil in bottom of roasting pan and brown the roast on all sides. About 2 mins on each side.
2) In a bowl, form a paste using the vegetable oil, mustard, caraway seeds, garlic powder, salt and pepper. Rub over the roast and let sit for 30 minutes.
3) Preheat oven to 350 degrees.
4) Arrange the onions in the bottom of a large roasting pan. Pour in the beer. Place the roast, fat side down, on top of the onions. Cover the pan with foil.
5) Roast 1 hour in the preheated oven. Remove foil, turn roast, and score the fat. Continue roasting covered for 2 1/2 hours or to a minimum internal temp of 160 degrees. Remove from roasting pan and save liquid in pan. Let roast sit for 15 mins covered before slicing into thin slices.
6) In a saucepan heat the remaining liquid to a low boil. Mix in 2 tablespoons of butter and add cornstarch slowly to make thick for gravy. You may add more water to make more gravy.
