3 1/2 T. fresh lime juice (from 3 limes)
4 T. chopped cilantro
1/2 tsp. salt
1/4 tsp. freshly ground pepper
4 (6 oz.) skinless boneless chicken breasts (halves)
2 ears of fresh corn
1/4 c. water
1 (8 oz.) ripe avocado, peeled and diced

1. Combine 2 T. of the lime juice, 2 T. of the cilantro, 1/4 tsp. of the salt and 1/8 tsp of the pepper in a large zip lock plastic bag; add the chicken. Squeeze out the air and seal the bag: turn to coat the chicken. Refrigerate for 20 minutes.
2. Spray the grill rack with nonstick spray and prepare the grill.
3. To prepare the salsa, combine the corn and water in a microwavable dish. Cover and microwave on High until tender-crisp, 3 minutes. When cool enough to handle, cut the corn kernels from the cobs. Combine the kernels with the avocado and the remaining 1 1/2 T. lime juice, 2 T. cilantro, 1/4 tsp. salt and 1/8 tsp. pepper in a bowl.
4. Grill the chicken 10 inches from the heat. Serve each with 1/2 c. salsa.
