Marinade:
1/2 c. Chablis or other dry white wine
1/2 tsp. dried whole thyme
1/4 tsp. crushed red pepper
3 cloves garlic, crushed

Coating:
1/4 c. all purpose flour
1/4 c. Parmesan or Romano cheese, grated
1/4 tsp. salt
1/4 tsp. pepper
1 1/2 tsp. olive oil
lemon wedge
4 red snapper fillets (4 oz each, 1 inch thick)

Directions:

Combine marinade ingredients in a large ziploc bag. Add fish; seal bag, and marinate in refrigerator for 30 minutes, turning bag occasionally. Remove fish from bag; discard marinade and set fish aside. Combine flour, cheese, salt and pepper in a ziploc bag. Add fish and shake to coat. Spray a large skillet; add oil, and place over medium heat until hot. Add fish, and cook for 6 minutes on each side or until fish flakes easily when tested with a fork. Serve with lemon wedges.
