1 center-cut pork loin
apple juice (for marinating)
1/4 c. Dijon mustard
1/4 c. honey
1 1/2 c. Pepperidge Farm herb seasoned stuffing
salt to taste

Directions:
Directions:
Preheat oven to 375º. Marinade pork loin in apple juice for several hours. In small bowl mix Dijon mustard and honey. Coat pork loin with mixture. Put stuffing in a plastic bag and crush the larger pieces. Spread stuffing on a cutting board and roll pork loin in stuffing mix until evenly coated. Put in greased baking dish and bake until internal temperature is 180º (approximately 30 minutes depending on size of pork loin).

Note: Be sure not to cover pork loin before serving or crust will get soggy.
