1 unbaked pie crust (9 inch)
12 strips bacon, cooked and crumbled
1/2 c. pepper jack or Monterey jack cheese, shredded
1/2 c. sharp cheddar cheese, shredded
1/3 c. onion, finely chopped
4 eggs
2 c. heavy whipping cream
3/4 tsp. salt
1/4 tsp. sugar
1/8 tsp. cayenne pepper

Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450º for 5 minutes. Remove foil; bake 5 minutes longer. Remove from oven and let cool. Sprinkle bacon, cheeses and onion over the crust. In a bowl, beat eggs, cream, salt, sugar and cayenne; pour into crust. Bake at 375º for 30-35 minutes or until set.

Yield: 6-8 servings
