1 - 15 oz. can black beans (Rince and drain)
1 c. frozen corn thawed

Dice the following:
1 green pepper
1 red pepper
1 yellow pepper
1 c. red onion
1 c. celery
1 c. Monterey cheese or pepper jack cheese

3 T. lemon juice
3 T. red wine vinegar
2 T. olive oil
2 T. garlic minced

1 T. Italian seasoning
1 tsp. pepper
1 tsp. ground cumin

Directions:
Directions:
Rinse and drain black beans. Add corn to beans.
Dice peppers, onion, celery and cheese and add to above ingredients. Mix lemon juice, vinegar, oil and garlic in separate bowl and add to bowl with above ingredients and stir. Then add seasoning, pepper and cumin to taste.

This tasty salsa has been enjoyed by many here at the lake. Mark Sanger makes this by dicing every thing himself, I cheat and use a dicer Larry and I found on an info commercial.
