2 c. dry pinto beans
2 c. water
salt
2 lb pork shoulder, cut in 1" cubes
2 Tbsp. Wesson oil
1 sm onion, chopped
1/2 c. ketchup
1 Tbsp brown sugar
1/2 tsp. dry mustard
1/8 tsp. thyme or marjoram

Directions:
Wash beans, add water; bring to a boil for 2 minutes. Cover, let stand 2 hours. Drain, rinse beans; add water to cover and 1 t salt. Bring to boil; simmer, covered 1 hour. In 12" skillet, brown pork and onion in oil. Add to beans with 1/2 tsp. salt and remaining ingredients. Cover; simmer 1 1/2 hours until meat is tender. Serve with cornbread.

Yield: 6 servings
