1 lb. orzo
8 oz feta
15-20 sm black olives
1 1/2 c. cherry tomatoes
1/2 med red onion, finely diced
1 yellow bell pepper, diced
10 fresh basil leaves, cut or torn into strips*
1/2 c. olive oil
1/4 c. balsamic vinegar
2 Tbsp. red wine vinegar
Fresh cracked pepper
Salt to taste

Boil orzo according to package directions. Drain and pour into mixing bowl.

In a separate bowl, whisk oil, vinegar, salt and pepper. Taste for seasoning and adjust as necessary. Since balsamic vinegar is sweet, you can add as much as you want without upsetting the balance of oil:vinegar. Add more of anything and everything until you have the consistency and flavor you like.

Add crumbled feta, olives, tomato, bell pepper and red onions. You can also add any other garden vegetables you like. Pour in dressing and mix well. (I use more olives than most recipes call for because they add so much flavor, but you can reduce the number if you like.)

Just before serving, adjust seasoning and add fresh basil leaves.

*Basil leaves will not turn dark if you tear them (as opposed to chopping them with a knife). That's also the reason I don't add the basil until I'm about to serve it. It will be greener and taste fresher.
