1 whole chicken (4-5 lb), cut into pieces
5 qts water
6 sprigs parsley
3 lg carrots, cut into 2 inch pieces
3 stalks celery, cut into 2 inch pieces
4 cloves garlic
1 lg onion, cut into 2" pieces
2 Tbsp. butter
2 c. carrots, diced
2 c. celery, diced
1 c. onion, diced
2 Tbsp. salt
1 tsp. pepper
8 oz egg noodles

Directions:
Directions:
Combine chicken and water, parsley, bay leaves, 2" carrots, 2" celery pieces, 2" onion pieces, and garlic. Bring to a boil, reduce heat and simmer, uncovered for 1 hour. Remove chicken from broth, discard bones and skin and chop meat. Strain broth and discard the vegetables. In dutch oven, melt butter. Add diced carrots, celery, and onion. Cook 8 minutes, stirring constantly. Add broth, salt and pepper, and noodles. Boil over medium-high heat for 10 minutes. Add chicken and cook for 2 more minutes.
