2 c. cooked rice, chilled
6 strips bacon
1 yellow onion, diced
2 Anaheim chiles, chopped
salt and pepper
1 tsp. sugar
1 28 oz can diced tomatoes, strain tomatoes
1/4 c. chili powder
1/2 lb. sharp cheddar cheese
small can of tomato juice (optional)

Directions:

Fry bacon, but not too crispy. Reserve 3 T. of grease in pan. Add onions and cook until wilted. Add chiles, salt, pepper, and sugar. Add strained tomatoes. Stir in the cooked rice. If more moisture is needed, stir in some or all of the reserved tomato juice. If more moisture is needed, open the can of tomato juice and add as needed. Place in greased casserole dish and top with grated cheese. Bake at 325º for 1 hour.
